Despite the fact that Indians sold thousands of tons of meat to the fur traders to feed their hundreds of employees and voyageurs, most tribes developed sophisticated tastes for imported foods, such as rice, bread, and dried fruits. Many of the farming tribes traded for salt and nearly everyone enjoyed feasts of sea biscuit (hard tack or pilot bread), coffee, tea, and hot chocolate. After canned foods were introduced, exotic items such as pineapple, tomatoes, and salmon were available from traders. Evaporated foods made it possible for native people to hunt and trap in areas lacking game, but rich in furs.
